Ingredients

    For the filling
  • 2 large cooking apples
  • 1 tbsp lemon juice
  • 4 tbsp water
  • 20g / ¾oz butter
  • 2 tbsp caster sugar
    For the topping
  • 75g / 3oz butter
  • 100g / 3½oz caster sugar
  • 100g / 3½oz self-raising flour
  • 2 free range eggs - lightly beaten
  • 1 tbsp boiling water
 
 

Method

Preheat the oven to 180C/160C Fan/Gas 4.
Peel and core the apples
Chop up but not too small
Put the apples in a microwaveable dish with 4 tbps watter
Microwave for 2 mins then stir
Add the lemon juice
repeat the process until the apples are as soft as you like them
or
Put the apples in a saucepan with the lemon juice and water
Stir, cover and cook them for a few minutes until the apples are soft
Add the butter and caster sugar and stir
Put the mixture in an oven proof or ceramic dish, about 2 ins deep. Leave to cool while you prepare the topping

The Topping
Cream together the butter and caster sugar until light and fluffy
Fold a spoonfull of flour then a spoonfull of egg into the sugar mixture until blended
Fold - Do Not Stir to keep air in the mixture
Add a spoonful of boiling water to the mix
Spoon the mixture over the apples
Cook in the oven for 30-35 minutes or until the topping is golden brown and a bit puffed up
Serve with custard or another topping
