Delicious Italian Ministrone Soup from Jennifer in Scotland

Ingredients

  • 2 carrots (chopped)
  • 1 small onion (chopped)
  • Olive oil
  • 3 cloves garlic (crushed)
  • 1 tin chopped tomatoes
  • 1 carton passata
  • 1 tsp sugar (optional to cut acidity)
  • Vegetable stock
  • 1 red pepper (chopped)
  • Dried thyme, basil & oregano (or use Italian herbs)
  • Ditali pasta (small)
  • Cabbage or kale (chopped)
  • Salt/pepper
 
 

Method

Fry onion & carrots in olive oil for 10 mins
Add red pepper and garlic- cook for 5 mins
Add tinned tomatoes, passata, veg stock and dried herbs
Simmer for 40 mins
Add seasoning, pasta & kale (or cabbage) & cook for 20 mins.
