Russian Vegetable Soup

Simple Satisfying Russian Vegetable Soup From Irene Fernie, East of Scotland

Ingredients

  • 1 medium onion
  • 1 medium potato
  • 1 small leek
  • 120g carrots
  • 65g savoy cabbage
  • 1 medium parsnip (about 10cm)
  • 2 vegetable stock cubes in 2 pints water
  • Half a teaspoon of mixed herbs, 2 teaspoon dried parsley pinch of nutmeg salt and pepper to taste
 
 

Method

Mix cubes in water to make stock
Roughly chop all vegetables and add stock
Add herbs and seasoning

Cook in pressure cooker for 15 minutes. Cool slightly and liquidise. Serve with crusty bread
